Is there any way to do this? I imagine DOPs or POPs collisions triggering note out and velocity attributes to file, preferably at sub $F level. This could all be played back through a sampler or pd/maxmsp custom patch.

There is a MidiOut CHOP, which you could use in conjunction with the Dynamics CHOP. Midi doesn't currently work on Linux, however.
