Houdini is not getting more VEXy than previously, just more people are becoming comfortable with VEX so you will see more solutions using VEX as everyone tend to choose the fastest way to solve particular problem, which is not necessarily VEX but quite often is
also VEX solutions are easily shared on forums as opposed to others where you need to attach file or screenshot, which from a lot of facilities is not possible
VOPs are very powerful and for most of VEX functions you have corresponding node and even better one VOP can have functionality of many nodes as is the case with noises, sampling functions, etc.
There are occasional VEX functions that don't have VOP equivalent so you'd have to use Inline/Snippet VOP, but overall nothing is stopping you from using VOPs
