how can I collapse my operators into a subnetwork?

Same as 8.1: Select your operators, Shift+c

It's also in the Right Click menu, but in a different spot. If you select your nodes, then move your mouse to a blank area in the network editor and Right click you'll see an option to “Collapse”

Honestly, the natural thing to do is to Right click on the nodes themselves while looking for this, so I think it would be nice if it were added to that menu.
