Houdini's description lists anaglyph and interlaced modes for stereoscopic editing.
1) Does this mean I can see stereoscopically as I actually work on an objects geometry in the main viewport, as opposed to just previewing stereoscopically in non-editing window?
2) I understand anaglyph means wearing red/green glasses, but what is the interlaced option about? Does this require polarized glasses and, as above, can I see in stereo interlaced mode while actually editing an object?
Thanks.

when you are looking through StereoCamRig, you will see your viewport in either Anaglyph or Interlace mode
so you can lock your cam and work in stereo if you want to
either using red/blue glasses or according to help: “You can use passive polarization glasses to view the images in horizontal interlace mode”

For interlace mode you need a special “3D” monitor, there is a Hyundai monitor that supports this.
