I would like to write some VEX code to modulate volumes in SOP. Does anyone have any idea how t do this?

you can use either Inline VOP inside Volume VOP SOP to write pure VEX code
or create new CVEX shader that will modulate something e.g. density and in Volume VOP change Vex Source parameter to Shop and choose your CVEX shader
