The velocity control is still there, just in a different place. Have a look at the SOP that you are using for your particle source. You'll find the shelf tool has created a node called create_surface_volume. This has several tabs, one is Velocity Volumes. This tab includes a tickbox for Add Velocity - you can then add a fixed velocity here. I attach an example.

Yes, you can combine all of these things if you master vops shader writing. But for reflection you would need well defined normals which a volume does not have by default. I am not sure how a refraction map would work.
You can also use the isooffset node to convert your volume to a standard surface, which you can shade using standard shaders.

The direct equivalent of killVolume is the particle fluid sink DOP, though by default its set up to delete particles inside the cube rather than outside it. You can use the sink particles shelf tool as one way of adding this to your DOP network.

I've added a few more tutorials on Vimeo
http://vimeo.com/channels/54102 [vimeo.com]
They cover combining keyframe animation and simulation in DOPs, and some on shader creation and rendering. Hope you find them useful.

The first one goes by the name of Display C-Plane. You have to have Geometry viewer selected in the first column to see it. Not sure about the mantra one.

A material will use any attributes that you attach to your objects that match the name and type of its own parameters. Most of the gallery materials have the option to use ‘Point Colors’ this expects to find a three valued float attribute Cd on your geometry. You can set this up using a Point SOP. Several ways to do but easiest is set the color on the points then make sure the objects you instance using the copy SOP (I guess you are using a copy SOP) inherit the Cd attribute.

Thanks - that's an important point. I knew that that was true for micropolygon PBR. And having just tested it, I can see its now true for ray trace PBR too, so I'll add a note.
The PBR documentation could perhaps bring that out a bit more clearly…

Thanks for the feedback. Its really useful to get suggestions from the pros, particularly if anyone spots a mistake, which there are probably plenty of.
I'll add a note about mp3 files - I guess it was just that particular mp3 that produced an error - I didn't try multiple files. I'll also try to dig out the hip files, its very true about having the file to work with.
As to how I picked up what I know about Houdini, two years of study, and paying close attention to other great tutorials, and the forums

I've added some introductory videos on how Houdini handles Volumes, and a slightly more advanced set on Music driven animation using CHOPs on Vimeo. Hope they are useful.

I uploaded a couple of new tutorials on Vimeo - one is an introduction to attributes aimed at beginners, the other, a bit more advanced, is on the SOP Solver, with the simulation of a match that blackens and burns up. Hope they are useful.

Just a quick post to say I put up on Vimeo some video tutorials covering what I've learnt using Houdini on and off over the last couple of years. Hopefully some stuff that will be useful. I'd welcome any feedback (comments and corrections).
