i have multi dop network and i want to activate gravity force in all of them with a custom variable, is this possible to create global variables in houdini ?

Yes it's possible.
From top menu go to edit -> aliases and variables.
Select variables tab and now in bottom right enter your variable name and at the front of it enter your desirable value.
