Depends if you want to pay for it / what you'd like to create with it.
http://cmivfx.com/store/460-Houdini+Directable+Particles [cmivfx.com]
http://cmivfx.com/store/280-Houdini+Fractals [cmivfx.com]
These are two different projects but you'll learn alot of vops through them and you can apply both techniques.
I you'd prefer free tutorials you should check one of these channels:
Official Houdini vimeo page.
http://vimeo.com/goprocedural [vimeo.com]
Or Peter Quint's vimeo page.
http://vimeo.com/user2030228 [vimeo.com]
I learned alot from all these sources, hope this helps.
If you are a little bit more specific about what you want to create I could point you to a more specific tutorial.

Ah yes I see.
Well let me tell you something about Houdini.
While VOP's are really really powerfull in Houdini and learning this really is a must, in my opinion this is not the most important part of learning Houdini.
The procedural workflow is the most important part of Houdini, it allows artist to think non linear, creative thinking out of the box and a few steps ahead.
If you understand this procedural terminology you can basically create anything you like.
If you really are a beginner I would suggest checking out these tutorials in the correct order:
http://www.sidefx.com/index.php?option=com_content&task=blogcategory&id=202&Itemid=361 [sidefx.com]
I wish I had these tutorials available when I started out, I ended up watching them anyways since there's always a little trick you might learn from these.
You might think that 13 lessons from 1 hour each might take a long time but if you just watch 1 lesson a day (just 1 hour of your life) it will definitely pay off in the long run.
These videos will get you through all of the fields in Houdini, even visiting VOP's.
This will really kickstart your way into the VFX field, and I hope you will follow through!
