I believe s and t are analogous to u and v.

The UV Texture SOP has the option to generate uv's based on st (parametric uvs) for NURBs and Bezier Patches. Three options to choose from. See the help.

Meshes and Curves just use Rows and Columns option.

If you want to fetch the actual parametric value using expressions, look at:
unituv
primuv
realuv
uvdist
surflen
and more

In a textport type:
exhelp -k uv
and that will return to you all the expressions that have uv in their name or function description.
There's at least one school like the old school!
