Trail animated points. Start with some points and use either transform SOPs or point SOPs to move the points around. Follow this with a Trail SOP and connect them together in the Trail SOP or follow with an Add SOP.

Trailing particles is a variant on trailing geometry. Animiate a fixed number of particles at frame one then in SOPs, follow the Pop SOP with a Cache SOP then trail SOP. You will have to connect the particle trails based on the number of initial start points for this to work. There are many variants of this technique. Some involve trail, others don't.
You will have to work on the particle dynamics so that they weave around each other. Tricky but very organic when done right.

Pre-modelled curves then animated carve SOPs is another. This is nice as you can finish model your curves as you like (even with particles!) then carve them with a single slider.

Clip a flattended version of your geometry, two actually, one for the U direction and one for the V. Animate cut each side using either carve SOP, clip SOP (if polygons or open curves), then creep each surface on top of a final mesh. Carve the crept surfaces up using the U direction from 0 to 1 and cut up with many divisions to get your curves.
There's at least one school like the old school!
