What's the difference between production and daily builds?
Why is the latest production build 8.1.704, but the latest daily build is 8.1.859?

It's the model SESI uses for releasing software. Some companies, like Alias, have releases that are few and far between. They test like mad, release a version, and for the most part you better be prepared to work around the bugs because you're not seeing another release for a while. SESI, however, has a milestone release which is considered the official release, but continues to create daily builds which contain fixes and often, new features.
There's good and bad to both models, because of course a daily release might conceivably introduce unforseen bugs, but on the whole my experience with the two models is that as long as you have an aggressive support-oriented company, like SESI, their model is far, far more responsive to problems. The recent rather major fixes to mocap utilities, for example, happened within days of us reporting problems we were encountering.
Here we tend to run the daily builds, but we typically wait for a semi-quiet time before upgrading. Officially, it's “use at own risk”, but it's pretty safe and usually advantageous.
