When you are creating a flipbook and the output is set to ip, the documentation says it is then sent to Mplay. What exactly is happening? I can't find this information in the documentation. Is the flipbook stored in RAM then loaded into Mplay? Or is the flipbook cached to a default temp directory on the hard drive then loaded to Mplay? How can I change the directory where it is being saved?

When writing to ip, Mplay reads the image buffer directly from Houdini, and as far as I know, doesn't write any intermediate files anywere. So yes, the flipbook is stored in RAM and unless you save the flipbook somewhere, it's lost when you close that Mplay session.
You can write the flipbook to a different location directly if you want, from the Flipbook window (just change ip to a path). Or just save the files from Mplay after it finishes.
Alternatively, you can use the OpenGL ROP [sidefx.com] to shoot playblasts.
