I'd like to try the Houdini Apprentice version but I'm not sure what to download.

If I download the “Houdini 7.0.489 for win32” file will that allow me to get an apprentice license or do I need a different version?

That will do it. The first time you run any of the products, you will be given the chance to obtain an apprentice license.
