If you want to totally disassociate a pane from all others, you need to do two things:
- change the number to another association or none in the upper right corner.
- In the Pane menu > Linking > “Tie To Parent Network's Current Node” should be off.
It is the second option that turns on and off the behaviour where two panes follow each other around. e.g.: one in Objects and the other pane set to follow will display the SOP network.

If you want to see all the other objects in the scene while you model, just toggle on the “See one/all” button at the bottom right of the viewport. It is the one that either looks like a tiny red pyramid (this object only) or a red pyramid on a blue grid (see all other objects as well).

As for the NURBs cv affecting vertecies in a polymesh, what function(s) are you using to accomplish this? It could be difficult and slow in VEX or just not possible right now.

There is also the html help on VEX in general in $HFS/houdini/vex/html/. Not a white paper but you can glean a lot of info by the functions that are used and how they are accessed by mantra.
