Fruit animation-- Project Texture after ray and sweep

HiI'm now trying to make fruit peeling effect.
I could make the animation but I cannot figure out how I can apply the material to it.
I'm using the megascan's lime model and the problem is the texture as you can see in the photo I attatched.
The yellow area must be in the top and the bottom of the fruit but they aren't in the right place..
Any help would be appreciated. Thanks in advance.

Now I fixed uv as photo attatched shows but uv islands' boundaries are still strange.
This tutorial

says vdb nodes and some for-each loops nodes will solve the problem but mine is not particles but vellum so I'm still keep trying my RnD.
Any hint would be appreciated🎗️
