I'm about to start looking into a MaterialX lookdev workflow for being able to use multiple renderers with the one material. Would I be correct in thinking that the MaterialX subnet is the only way I could create a material and get it to render very close across multiple renderers? Put another way: If I use a Karma MaterialX subnet, would it be correct to assume that a material created inside would not render properly with Renderman/Vray etc due to the Karma-specific nodes used inside?

The Karma MaterialX subnet uses a karma namespace which would prevent other renderers from seeing the material at all, even if you only use compatible nodes inside.
