I tested your VEX code, and it works the way you intended with the bubbling look. Perhaps your sphere doesn't have enough points for you to see this. If you're using the polygon sphere, try raising the frequency higher than 32. If you're using the polygon mesh sphere, try using more than 32 rows and 32 columns.

It sounds like you're talking about Houdini's value ladder which lets you interactively change numeric values with mouse movements.
Using your example, to change the values of all 3 text input boxes for the Offset parameter, move the mouse cursor over the Offset label to highlight it. Then hold down the middle mouse button and drag left or right to change the values. I don't know why alt+left button, which is the shortcut for “set keyframe,” was displayed in the video, but no preferences settings need to be changed to use this UI function.

I'm still on Mavericks and had the same problems with reading OBJ files in builds 13.0.509 and 13.0.547

At first glance, it looks like you selected the incorrect edge for the bottom polybevel, but your node network doesn't look like the network in the tutorial. If you're following the tutorial steps exactly, the polybevel SOP should be under the polyextrude5 SOP. (Also, it should be polybevel1 if you're following the steps. polybevel3 suggests that you're selecting the three edge loops separately instead of all three at once.)

The columns are shattering at the beginning of the sim because they are not in contact with the ground plane. The way the tutorial is written, there is a micro gap between the bottom of the columns and the ground plane. The shattering you are seeing at the beginning comes from the columns falling down onto the ground plane.
There are two fixes for this: You can either move the columns closer to the ground plane or tweak the lower bound on the force needed to cause shattering to happen. To do the second option, dive into the AutoDopNetwork node, select the fractureparms node, and then change the Min value for Min/Max Impact parameter under the Impact tab.
